Garlic Crusted Chicken-N-Kale
- 4, 6 oz boneless, skinless chicken breasts
- 1 cup full-fat coconut milk
- Juice from 1 1/2 lemon
- 4 garlic cloves, minced
- Dash himalayan salt
- Dash black pepper
- 1 box *Simple Mills Fine Ground Sea Salt Almond Flour Crackers*
- ¼ cup grass-fed ghee, melted
- 1 head curly kale
- 1 avocado
- Preheat oven to 350 F.
- In a small bowl, combine coconut milk, lemon juice, garlic, salt and pepper. Mix well.
- Dip each chicken breast in the coconut milk mixture, coating the entire chicken.
- Smash a bag of Simple Mills Almond Flour Crackers into crumbs.
- Roll chicken in the almond flour crackers.
- Add chicken breasts to a baking sheet.
- Pour melted ghee over each chicken breast.
- Bake chicken for 45 minutes.
- While chicken is baking, use your hands to massage one avocado into the kale and drizzle lemon juice from half of a lemon.
- Serve kale salad at the base of baked chicken.
