Crockpot Salsa Chicken

Ingredients

For the Chicken

  • 1 lb boneless, skinless chicken breast
  • 1 tbsp + 1 tsp taco seasoning
  • 2 cups red bell pepper diced
  • 2 cups orange bell pepper diced
  • 2 cups yellow onion diced
  • 2 cups salsa equal to one 16 oz jar salsa for the whole recipe
  • 1/2 cup diced green chiles equal to one 4 oz can for the whole recipe

For the Rice

  • 2 cups frozen pre-cooked brown rice
  • 1 tbsp extra virgin olive oil
  • salt a few dashes
  • 1/3 cup cilantro
  • 1/2 lime (optional) (juiced)

To Serve

  • 1 medium avocado

Instructions

  • Coat chicken liberally with taco seasoning and add to the crockpot.
  • Cover chicken with the diced veggies and pour salsa and chiles on top. Mix.
  • Cook on low for 6-8 hours.
  • When ready to eat, heat brown rice according to package directions. Once hot, mix in olive oil, salt, cilantro, and optional lime juice. Serve with chicken and avocado.
