Ingredients
- 3 eggs
- 1 tsp taco seasoning
- salt
- pepper
- avocado oil cooking spray
- 2/3 cup bell pepper (diced)
- 1/3 cup white onion (diced)
- 1/4 cup jalapeno pepper (1/4 c = 1 small pepper)
- 1/2 cup black beans
- 1 tbsp cilantro (diced)
- 1/4 cup guacamole
- 1/4 cup salsa (optional to serve)
- hot sauce (optional to serve)
Instructions
- Beat eggs in a bowl with taco seasoning plus a few dashes of salt and pepper and set aside.
- Spray a pan with avocado oil cooking spray and add in peppers, onions, jalapeno and a few dashes of salt. Cook over medium/high heat until veggies begin to soften and brown, about 5-7 minutes.
- Once veggies are soft, add in black beans and mix. Turn heat down to medium and pour eggs over mixture. Continually mix until eggs are done, about 3 minutes.
- Turn heat off and stir in cilantro. Season to taste with salt and pepper and serve with guacamole, optional salsa and optional hot sauce.
