Fish Tacos with Broccoli Slaw

Ingredients
For the Fish:
- 6oz cod
- 1/2 tsp taco seasoning
- salt (to taste)
- pepper (to taste)
For the Slaw:
- 1 tbsp avocado oil based mayonnaise (recommend Primal Kitchen brand)
- 1 tbsp lime juice
- 1 tbsp coconut aminos
- 1/2 tbsp water
- salt (to taste)
- pepper (to taste)
- 1 cup broccoli slaw
For Assembly:
- 1/4 cup black beans
- salt (to taste)
- pepper (to taste)
- taco seasoning (to taste)
- 2 grain free tortillas (recommend Siete brand)
- 1/4 medium avocado (optional)
- 2 tbsp salsa (optional)
- hot sauce (optional)
Instructions
For the Fish:
- Put the cod in a pan over medium/high heat.
- Liberally salt and pepper the top side of the cod and add half of the taco seasoning. Cook for three minutes and flip.
- Season the other side in the same way and cook for an additional 3 minutes
- As fish becomes white, break it apart with a spatula to create flakes. Continue to cook until fish is fully opaque.
For the Slaw:
- Mix all liquid ingredients, salt, and pepper in a bowl.
- Pour dressing over broccoli slaw and mix well.
For the Assembly:
- Mix black beans with salt, pepper and taco seasoning to taste.
- Heat the tortillas in the microwave for 15-30 seconds or in the pan until warm.
- Add fish, slaw and desired toppings to tacos and enjoy.
