White Bean Blondies

These White Bean Blondies have 4 grams of whole food-based fiber (yes, in a dessert!) from the cannellini beans (you can’t even taste them) and only a handful of high quality ingredients. They are also low in added sugar.
I love this recipe because it’s delicious but also because it’s approachable and easy. You just add all of the ingredients to a food processor, pulse, mix in chocolate chips and bake. Checkout this video of me making them.

Ingredients
- 1 3/4 cups cannellini beans (drained and rinsed. 1.75 cup = 1 15 oz can)
- 1/3 cup honey
- 1/3 cup grass-fed ghee (melted)
- 3/4 cup oat flour
- 2 tsp vanilla extract
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 cup lily's salted caramel chocolate chips (for low histamine, sub Pascha Vegan White Chocolate Chips)
- avocado oil cooking spray
Instructions
- Preheat oven to 350 F (note: you can also eat this as dough if you prefer).
- Add all ingredients except chocolate chips to a food processor and blend until smooth, about 3-5 minutes.
- Stir in chocolate chips.
- Spray an 8x8 baking dish with avocado oil cooking spray and pour in batter. Bake for 20-25 minutes or until slightly golden.
