Chicken Cacciatore

Ingredients

  • 1 lb boneless, skinless chicken breast (cubed)
  • 2 tbsp extra virgin olive oil
  • 4 cloves of garlic (minced)
  • salt
  • pepper
  • 2 cups yellow onion (large, diced)
  • 2 cups green bell pepper  (diced)
  • 2 cups red bell pepper  (diced)
  • 2 cups baby bella/cremini mushrooms  (diced)
  • 2 tsp italian seasoning
  • 3 1/2 cups crushed tomatoes (equal to 28 oz can)
  • 1 tbsp balsamic vinegar
  • 2 cups chicken broth
  • 1 tsp fresh basil (optional) (to garnish)
  • 2 cups bean/lentil based pasta (dry)

Instructions

  • Heat olive oil in a large pot over medium/high heat. 
  • Add in chicken and season liberally with salt and pepper. Add in garlic and cook to brown chicken, about 5 minutes. It does not have to be cooked through.
  • Once chicken is browned, add in all other ingredients, making sure veggies and meat are under the liquid. Bring to a boil and then turn down to a simmer, cooking for about 30 minutes or until veggies are soft and the extra liquid has evaporated. The consistency should be like a thick stew.
  • Cook lentil/bean pasta according to box directions.
  • Option to garnish with fresh basil, serve over lentil/bean pasta.
