Tender chicken is simmered with onion, bell peppers, mushrooms, and a rich tomato-based sauce for a comforting meal that’s naturally gluten-free and packed with more than 40g of protein and 11g of fiber per serving. Heat olive oil in a large pot over medium/high heat.
Add in chicken and season liberally with salt and pepper. Add in garlic and cook to brown chicken, about 5 minutes. It does not have to be cooked through.
Once chicken is browned, add in all other ingredients, making sure veggies and meat are under the liquid. Bring to a boil and then turn down to a simmer, cooking for about 30 minutes or until veggies are soft and the extra liquid has evaporated. The consistency should be like a thick stew.
Cook lentil/bean pasta according to box directions.
Option to garnish with fresh basil, serve over lentil/bean pasta.
