"Jennifer Aniston" Mediterranean Quinoa Salad

Ingredients

  • 1 1/3 cup cooked quinoa
  • 1 lb 5 1/3 oz firm tofu
  • 2/3 cup red onion diced
  • 1 1/3 cup cucumber diced
  • 2 2/3 cup spinach chopped
  • 2/3 cup fresh parsley
  • 7 tbsp + 1/3 tsp mint leaves
  • 7 tbsp + 1/3 tsp dry roasted pistachios shelled
  • 1 cup feta

For The Dressing

  • 2 tbsp + 2 tsp extra virgin olive oil
  • 2 tbsp + 2 tsp lemon juice
  • 2 tsp red wine vinegar
  • salt
  • pepper
  • garlic powder

Instructions

  • Prepare quinoa according to package directions and add to a large bowl.
  • Crumble tofu into the bowl.
  • Add in all other salad ingredients to the bowl.
  • In a small bowl, mix together olive oil, lemon juice, red wine vinegar, and a few dashes each of salt, pepper, and garlic powder.
  • Pour dressing over salad and mix. Season to taste with additional salt, pepper, and garlic powder.
