Chocolate Chip Cookies

I love to make an occasional chocolate chip cookie when I have company, when I’m going to an event, or when I’m just making a little treat for a Saturday night at home. This is when I will pull out this chocolate chip cookie recipe.

Ingredients
- avocado oil cooking spray
- 1 1/4 cups almond flour (can substitute tigernut flour)
- 1/4 cup arrowroot starch
- 6 tbsp coconut sugar
- 1/4 tsp salt (add an additional 1/8 tsp if you prefer a saltier cookie)
- 1/4 tsp baking soda
- 1 egg
- 6 tbsp grass-fed butter (melted)
- 1 tsp vanilla extract
- 1/3 cup dark chocolate chips
Instructions
- Preheat oven to 350 F. Line baking sheet with parchment paper and spray with avocado oil cooking spray.
- Mix all dry ingredients (flours, sugar, salt, and baking soda) to a bowl.
- Mix all wet ingredients (egg, butter, and vanilla) in another bowl.
- Pour wet ingredients into dry and mix.
- Stir in chocolate chips.
- Form dough into balls and press onto baking sheet. Bake for 12 minutes or until cookies are lightly golden.
