- 1/2 cup raw, unsalted cashews (soak for two hours)
- 1/2 cup culinary coconut milk full-fat (refrigerate overnight)
- 1/2 cup coconut milk beverage, unsweetened
- 1 white peach (diced)
- 2 tbsp hemp seeds
- 1/2 tsp cinnamon
- 1/2 tsp sea salt
- Add cashews to a small bowl and add water until it just covers the cashews.
- Soak cashews for 1-2 hours.
- Add the soaked cashews, full-fat coconut milk, and coconut milk beverage to a blender. Blend ingredients until smooth.
- Add the blended mixture to a pot on the stove, over high heat.
- Stir the mixture continuously until it comes to a boil. Reduce to medium heat and continue to stir for the next 2-3 minutes, until it becomes thick.
- Add the diced peaches, hemp seed, cinnamon, and sea salt. Continue to stir for an additional minute.
- Optional: top with freshly cut peaches, unsweetened shredded coconut flakes, or a handful of almonds or cashews.
