Ingredients
For the Shortbread Layer:
- 1 1/4 cups almond flour
- 1/4 cup arrowroot starch
- 1/4 cup coconut sugar
- 1/2 tsp salt
- 1/4 cup grass-fed butter (melted)
- 1 tsp vanilla extract
- 1 tsp water (optional) (if needed to bind dough)
For the Caramel Layer:
- 1 cup coconut cream
- 20 deglet noor dates
- 1/2 tsp vanilla extract
- 1/4 tsp salt
For the Chocolate Layer:
- 2 cups dark chocolate chips
Instructions
- Preheat oven to 350 F.
- Mix almond flour, arrowroot flour, coconut sugar, and salt in a bowl. In a separate bowl, add butter and vanilla extract and mix. Pour wet mixture into dry ingredients and knead until a dough forms. If you need, add 1-2 tbsp water to make the dough form.
- Press dough into an 8x8 baking pan and bake until golden, about 15-20 minutes.
- While dough cooks, heat coconut cream in the microwave for 2 minutes. Place dates in warm coconut milk and allow them to soak for 10 minutes.
- Transfer dates and coconut milk to a food processor along with vanilla extract and salt and blend on high until smooth, about 3 minutes.
- Pour date caramel into a saucepan and cook over medium heat until it thickens, about 10-15 minutes, stirring frequently so it doesn’t burn.
- Pour date caramel over shortbread crust and freeze until caramel is solid.
- Once caramel is solid, heat chocolate chips in the microwave, stirring every 30-60 seconds until melted.
- Pour chocolate chips over bars and freeze until chocolate is solid. Store in the fridge or freezer until ready to eat.
