Ingredients:
1 cup red bell pepper (chopped)
1 cup yellow onion (chopped)
1 cup zucchini (chopped)
1 large carrot (chopped)
1 1/2 tbsp yellow mustard
1/2 cup no sugar added ketchup
1 1/2 tbsp tomato paste
1 tbsp gluten free worcestershire sauce
1/4 tsp onion powder (plus additional to taste)
1/4 tsp garlic powder (plus additional to taste)
1/4 tsp salt (plus additional to taste)
1/2 tsp pepper (plus additional to taste)
1lb 8oz grass fed ground beef
2 medium sweet potatoes
Instructions:
Add all ingredients minus beef and sweet potatoes to the slow cooker. Cook on low for 5-6 hours or high for 3-4 hours until veggies are tender.
As the veggies near the end of their cook time, cook the sweet potatoes, either in the microwave or the oven.
Microwave:
Pierce each potato 5-10 times with a knife and microwave for 4-7 minutes or until tender.
Oven:
Preheat oven to 425 F.

4. Add ground beef to a pan over medium/high heat. Break apart with spatula and season with a few dashes each of salt and pepper. Continue breaking apart and cooking until no longer pink, about 5-7 minutes.
5. Once beef is cooked, add in sloppy joe sauce and cook until warm. Season to taste with additional salt, pepper, and garlic powder as desired.
6. Cut sweet potatoes in half and scoop out a portion of the middle. Fill with sloppy joe meat, knowing some might spill over.
