Ingredients
- 1 3/4 cups black beans (drained and rinsed, 1.75 c = 1 15 oz can)
- 1 3/4 cups canned black eyed peas (drained and rinsed, 1.75 c = 1 15 oz can)
- 1 cup red bell pepper
- 1 cup yellow bell pepper
- 1 cup orange bell pepper
- 2 cups cherry tomatoes (cut in half)
- 1 cup canned sweet corn (drained and rinsed)
- 1 cup red onion (diced)
- 1/2 cup jalapeno pepper (diced, seeds optional for extra spice)
- 1/2 cup cilantro (chopped)
- Dressing
- 1/4 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 3 tbsp lime juice
- 1/2 tsp garlic powder
- salt
- pepper
Instructions
- Combine all dressing ingredients in a small bowl and set aside.
- Combine all other ingredients in a large bowl. Mix in dressing.
- Season liberally with additional salt and pepper, as desired.
