Bang Bang Salmon Bowl

Ingredients
- avocado oil cooking spray
- 4oz wild salmon
- mushroom powder
- 2 cups shaved brussels sprouts
- salt
- pepper
- 1 tbsp avocado oil based mayonnaise
- 1 tbsp coconut aminos
- 1/2 tbsp sriracha
Instructions
- Preheat oven to 425 F and line a baking sheet with parchment paper. Spray with avocado oil cooking spray.
- Add salmon to one half of the baking sheet and brussels sprouts to the other. Spray the brussels sprouts with the avocado oil cooking spray and season with a few dashes of salt and pepper. Season salmon liberally with mushroom powder and add tray to the oven. Bake for 15-20 minutes.
- Add brussels sprouts to a bowl and mix with mayo, coconut aminos, and sriracha. Season with salt and pepper to taste and top with salmon.
