Ingredients
- 1 cup coconut cream
- 1/4 cup peanut butter
- 8 deglet noor dates
- 1 tsp vanilla extract
- 1 tsp maca powder
- salt (a few dashes)
- 1/4 cup dry roasted peanuts
- 1/2 cup dark chocolate chips
- 1 tsp coconut oil
Instructions
- Add coconut cream, peanut butter, dates, vanilla extract, maca powder, and salt into a blender and blend smooth.
- Pour mixture into an ice cube tray and sprinkle dry roasted peanuts on top. Freeze until solid.
- Once frozen, melt chocolate chips and coconut oil in a bowl in 30 second increments, stirring between.
- Pop ice cream bites out of ice cube tray and place on a baking sheet or plate lined with parchment paper. Pour chocolate mixture over each bite and freeze again until solid.
