Strawberry Shortcake Bread
Ingredients
- 1 cup almond flour
- 1 cup oat flour
- 1 tsp baking powder
- 3/8 tsp salt
- 3 eggs
- 1/3 cup maple syrup
- 3 tbsp coconut oil (melted)
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1 1/4 cups strawberries (chopped)
- Optional Glaze
- 1/4 cup coconut butter (optional)
- 1 tbsp maple syrup (optional)
- salt (optional) (dash)
Instructions
- Preheat oven to 350 F and line a loaf pan with parchment paper.
- Mix almond flour, oat flour, baking powder, and salt in a large bowl and set aside.
- In a separate bowl, mix together eggs, maple syrup, coconut oil, vanilla extract, and almond extract.
- Pour wet mixture into dry mixture and mix until combined.
- Stir in strawberries
- Pour mixture into the loaf pan and bake for about 30 minutes or until a toothpick comes out clean.
- Option to mix together optional glaze ingredients and spread over loaf.
