Chocolate Chip Zucchini Bread Muffins
Ingredients
- 1 egg
- 1/2 cup zucchini (grated)
- 1/4 cup almond butter
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
- 1 serving unflavored protein powder (recommend Be Well by Kelly hydrolyzed beef protein powder)
- 1/4 cup cacao powder
- 1/4 cup oat flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350 F.
- Beat egg in a large mixing bowl. Mix in zucchini, almond butter, maple syrup and vanilla extract and stir until well combined.
- Mix in protein powder, cacao powder, oat flour, salt and baking soda and stir until just combined.
- Stir in chocolate chips.
- Pour batter into muffin tins lined with cupcake liners or sprayed with cooking spray. Fill each tin about ? of the way full.
- Bake for 15-20 minutes or until muffins have set.
